So while I have been (im)patiently waiting for my basil and thyme to hurry up I have been combining recipes from different cooking sites. My issue with most online recipes is that they call for ingredients I cannot find in Northern MN. I like to use what I have at home on a regular night and not have to make an extra trip to the grocery store for one thing. So I take something out... add something new... change the amounts if I don't have enough, and then change it around the next time!
Ingredients:
1 bunch (approx. 2 1/2 cups) of fresh basil
1 clove garlic
3/4-1 cup olive oil
2 1/2 tablespoons raw pine nuts, walnuts, or almonds
Pinch sea salt
1/2 cup (organic) Parmesan cheese
Directions:
Blend all ingredients, small food processor works best.
Enjoy on toast, veggies, pasta, seafood or anything in need of sauce!
(I hope my basil looks like this soon!)
