Cut open, remove the seeds. Spread with butter and sprinkle with a little brown sugar. Bake until the flesh is soft... then enjoy!
Cut into chunks, remove seeds, spread in roasting tin, drizzle with oil, cook until soft then use to make delicious soup.
I don't like butternut squash, but the seeds are delicious if you clean most of the squash gunk off them, the roast in the oven with a little oil and salt...yummy!
I forgot about roasting the seeds. I'll have to do that with some of them! I might try to go the soup route, just to try something different :)
